Anything on the west shore is not going to have waves. Chankanaab has TONS of fish but also many people; not that it bothers the fish any. Coral reefs are a bit broken down from the hurricane that hit 2 years ago (Wilma?) Same goes for Playa Mia. If you want coral and deeper water then you need to get on a snorkel boat. When you get off the ships there are boats wanting to book you to take you out to some of the reefs, at a nearby pier. If you get others to go with you you will get a break on the price.
This website has some excellent info for cruisers who only have a day to spend on Coz; am including a link to their recommendation of the best snorkel boat as well:

    Call 1-888-862-3806 for help booking.
They will give you ideas for fun too like:

Definately the Swim with Dolphins, this is fantastic especially if you go to Dolphin Discovery on Isla Mujeres, as you have a 40 minute boat ride there and back with open bar and entertainment.

The Captain Hook Pirate ships are another fun thing to try.

A Jungle tour through the mangroves, with snorkelling over the Coral reefs.

If you´re into diving, then Call Ben Mooney at as he knows some great dive sites.

Xcaret is a wonderful day out, as you get to enjoy an ecopark, with dolphins, turtles ect and then get to watch probably the best show in the whole of Mexico at night.

A catamaran trip with is a must, a day sailing and snorkeling, with buffet lunch on Isla Mujeres, open bar, a shopping trip and the chance to have your picture taken holding a live shark.

At night, try the Cancun Party Hopper, there are now 2 different versions going to different bars, and they are great fun.

    Hope this helps.
